I believe that will work in a similar fashion Noel, but you won't be reducing pressure as much as a bowl of iced water would. Remember, we're trying to reduce the amount of steam that's produced by condensing it as quickly as possible and not allowing it to escape. An ice cold bowl will do that better than a metal lid, regardless of how low your temp is.
